Roasted Beet Puree

Beets can be bland, but when you roast them, it’s a whole new game!

Ingredients:

  • 3 large fresh beets
  • 1 cup water

Method:

  • Put beets on a baking sheet and into a preheated oven at 180°C until tender.  This will be about 2 hours, then let cool for another 2.
  • Peel beets and roughly chop and transfer to a saucepan with water.  bring to the boil over a medium heat.
  • Transfer to a blender and puree until smooth.
